The menu centres on chef-driven nigiri and sashimi, sourced from sustainable and certified origins. RYU holds Ocean Wise certification and sources premium fish from Japan's Toyosu Market — the most prestigious seafood market in the world. What arrives on the plate reflects that sourcing directly.
