The menu centres on chef-driven nigiri and sashimi, sourced from sustainable and certified origins. RYU holds Ocean Wise certification and sources premium fish from Japan's Toyosu Market — the most prestigious seafood market in the world. What arrives on the plate reflects that sourcing directly.

  • The foundation of everything at Peel. Ora King salmon torched with yuzu-miso and jalapeño. Chutoro — medium-fatty bluefin tuna, marbled and precise. The Toro Experience: Akami, Chutoro, and Otoro in sequence, three textures of bluefin that move from clean to rich in a progression worth slowing down for.

  • Built around the same sourcing standards as the nigiri program. The Truffle Salmon Maki — torched salmon, shiitake, avocado, black tobiko. The White Dragon. Rolls designed to be shared and ordered alongside nigiri rather than instead of it.

  • Chef's choice format available at the counter. The kitchen selects the sequence based on the day's market fish. The meal moves from lighter to richer, calibrated to the table. The most considered way to eat at RYU Peel.
